the story
The story of the Fiasconaro family began in the 1950s in Castelbuono, a small town in the Madonie Park in Sicily, and remains in Castelbuono. Because that's where the brothers Fausto, Martino and Nicola have chosen to stay.
A story written starting from 1953 by his father, Mario Fiasconaro, who from a small ice cream parlor in the main square of the town, built over time a thriving business in the field of pastry and catering.
In the 1990s, with the generational change and the advent of the sons at the helm of the company, the qualitative leap was made which transformed the Fiasconaro brand into a reality known outside the borders of the island.
The turning point comes from an intuition of Nicola, a talented master pastry chef, who chooses to interpret the most traditional dessert of Northern Italy, the Panettone, in a Mediterranean key: a great success that changes the destiny of the company, which has never stopped to grow up.
And precisely in the light of his commitment to the social and economic fabric, the President of the Republic Sergio Mattarella has nominated him among the twenty-five Cavalieri del Lavoro for 2020. An unexpected nomination, but above all an honor, which takes on a profound meaning: not a simple recognition, but an honor that encompasses an entire story. The story of a family.
Colomba
There are two desserts that unite all Italian tables at Easter: the chocolate egg and the Easter dove!
The dove is the Easter symbol that represents peace and brotherhood. The dove recalls the episode of the Universal Flood narrated in the book of Genesis: according to the biblical story, Noah saw the dove return with an olive branch in its beak and understood that the waters had receded from the earth.
The origin of this dessert is linked to many legends, one of which dates back to the first half of the 6th century: during the siege of Pavia by King Alboino, he was seen offering a dove-shaped dessert by an old merchant. as a sign of peace.
Recent history and perhaps the most realistic one, sees in the early twentieth century a well-known Milanese company create a cake similar to panettone, to enrich Easter menus: thus the dove was born as we know it today, a soft leavened cake, with candied fruit and a crunchy topping of icing and almonds.
COLOMBE FIASCONARO
Carefully selected ingredients, favoring the typical productions of Sicily, from pistachio to oranges, from Modica chocolate to apricots, from almonds to the precious Manna delle Madonie, they represent the real key to understanding all the different lines of Colombe Fiasconaro.
For bakery products, Fiasconaro uses only the natural leavening of mother yeast, a slow and patient process - up to three days - which offers undoubted benefits, including better protein digestibility and an intense aroma, with a a particular fragrance.
Then there are the people, the most precious resource in strictly artisanal work: hard and passionate work, for uncompromising quality.
